Zacapa originated in 1976 in Guatemala in the town of Zacapa. It was during the time when the town was celebrating its centenary that Zacapa rum was birthed. West of Zacapa is the perfect place to grow sugar cane. The land is green and fertile, the soil is acidic and there are prolonged periods of sunlight – perfect for the cultivation of sugar cane. The soil is even volcanic. Unlike most rums, Zacapa uses concentrated sugar cane, not molasses! Zacapa uses only virgin sugar cane – the first press of sugar cane.
The aging process is slowed in the Queztzaltenango highlands, 2,300 meteres above sea level. It is the cool mountain air which creates a unique complexity of flavor as the aging process is slowed. The House Above the Clouds is one of the world’s highest ageing facilities and is based on the original process devised by the Spaniards 500 years ago to age sherry.
Each drop of Zacapa rum passes through several casks that previously housed American whiskey, Oloroso sherry and Pedro Ximenez wines. Each of these large vessels imparts its own inimitable character that helps give Zacapa its distinctive taste.
